The best part about all of this is that making this happy little dish is entirely too easy. Kick the stoves and light the fires kids, it's grilling time.
Here's what you will need:
Two 15 oz. cans of
chunked salmon
Three fresh Jalapenos
One Lemon
Smoked sharp cheddar slices
One family size bag of french fries
First, open the cans of salmon, drain them and set in a large bowl. Take the stems off the Jalapenos, then cut them in half length-wise, dice them and add to the salmon. Roll the lemon on the counter, cut it in half, then squeeze the contents into the bowl with the salmon and jalapenos.
Here's the best part of the recipe, take your hands and start mixing everything in the bowl. Hands-on food is by far the best. A helpful hint after you've taken your frustrations out on your mixture, do not under any circumstances touch your eyes, or even your face for that matter. If you do, the jalapenos will burn you and trust me, it hurts.
Once you have all of the ingredients mixed together, form four patties and put them in a coated (i.e. Pam will do) skillet. Let them cook for about four minutes on each side. After that, take them off the heat, add your slices of smoked cheddar and cover the pan so they melt.
I realize you are probably thinking to yourself, "How are french fries healthy?"
First off we're not frying anything, we're baking them. Secondly we're not putting the burgers on buns, we can use the carbs from the fries to even everything out. I'm really not into the whole carb-cutting thing, but some of you people that weigh 96 pounds soaking wet and still think you are fat, will thank me later.
All you have to do is follow the directions on the bag for your fries. I would recommend adding an extra five minutes to the baking instructions if you like your fries crispy.
There you have it - heathy, spicy and so good. All you need now is Fat Tire or New Castle to wash everything down, and you've got heaven in your mouth.
